The Myth of 600 Degree BBQ Grill Mats

There are quite a few misconceptions surrounding the nonstick BBQ grill mat and among the silliest is the assertion that unique nonstick mats are out there (industrial, military, whatever) that, as opposed to other mats, can be used at high temperatures up to 600 degrees Fahrenheit - as opposed to the 500 degree limitation that is commonly referenced. This Chef Caron video quickly explains why that's impossible.

Due to the fact that all nonstick cookware is manufactured from identical material, polytetrafluorethylene (PTFE), it is all subjected to exactly the same limitations. It doesn't matter how much PTFE you layer on, it still has to be used at medium heat, meaning a 500 degree maximum. That restriction is spelled out in the FDA regulations concerning nonstick cookware. Watch the video for details.
