In order to reap the health benefits of eating salad and absorb all of the available nutrients from the vegetables into our body, new research suggests that we should avoid using fat free salad dressing. According to a study done by Purdue University, which studied the effects of different salad dressings on the absorption of nutrients, certain types of fat actually make salads healthier.

The lead author of the study and associate professor of food science at Purdue said: "If you want to utilize more from your fruits and vegetables, you have to pair them correctly with fat-based dressings. If you have a salad with a fat-free dressing, there is a reduction in calories, but you lose some of the benefits of the vegetables."

The monounsaturated fats were the most effective at lowest levels, which keep the fat content down, while still helping with the absorption of healthy nutrient phytochemicals like carotenoids from the vegetables, which are the antioxidants that help our bodies fight off cancer causing free radicals.
