Hi I'm Scott Mayer. I'm the mixologist here at Miami's oldest bar in Cabaret, Tobacco Road.

Alright so we're going to make a Bee's Knee. This is a classic cocktail from Prohibition era. Its very simple. It's a little bit of fresh lemon juice, juice of one lemon. We're going to do an equal part of honey syrup, which is just basically honey and water, equal parts. Now we're going to go ahead and use a London dry gin, which is a little bit meatier, little bit stronger than, in flavor, than the gin we've used in the past, the Bombay Sapphire. We use a London dry like Beefeater or Tanqueray just to give it a little bit more body and a little bit more of that juniper flavor you're looking for. This drink is then iced down. Tap, shaken. Then we strain that into a martini glass. And there you have it, the Bee's Knee.
