A Homemade Achari Masala that is quite intense and has strong flavors of the spice that goes well with pickles and gravies. You can make the masala in bulk and store in an airtight jar or in any container for future use. This masala can be stored and used for more than a month without refrigeration. Store in a deep freezer for a longer shelf life.
Homemade Achari Masala
Ingredients:
3/4 cup cumin seeds
1 cup coriander seeds
Roast it for 4-6 min
1 cup fennel (saunf)
3 tbsp mustard seeds (Rai)
2 tbsp Fenugreek seeds ( meethi dana)
2 tbsp black seeds ( kalonji)
1 tbsp Carom seeds (ajwain)
4 tbsp salt or as required
3 tbsp turmeric
4 tbsp chili flakes powder
1/2 cup khatai powder
Bay leaves ( taiz path)
1/4 cup chopped ginger
1 cup chopped garlic
Preparation Method
In a pan, add coriander & cumin seeds
Roast it for 5-6 min
In a bowl, add all ingredients except ginger, garlic & bay leaves
Mix well
Transfer in a dry mill
Grind coarsely
Transfer to a bowl
Add ginger, garlic & bay leaves
Combine well
Set in a jar
Refrigerate it for a few months
