Today I'm sharing my best chicken satay with peanut sauce recipe! This satay chicken is a blend of Indonesian and Thai chicken satay. INGREDIENTS:
1 1b/450g chicken thighs (boneless, skinless)
10 skewers (bamboo)
MARINADE
1 tbsp thai red curry paste
2 cloves garlic
1/2 inch ginger
1 stalk lemongrass
1/4 cup/60ml coconut milk
1 tbsp curry powder (1/2 tbsp coriander powder + 1 tsp
cumin powder + 1/2 tsp turmeric)
1/2 tbsp sugar (brown, white or palm)
salt (to taste)
PEANUT SAUCE
1 tbsp Thai red curry paste
1 tosp Masamman curry paste (or red curry paste)
4 tosp peanut butter
1.5 cups/350 ml coconut milk
1 tosp sugar (brown, white or palm)
1 tsp oil lime juice (to taste)
salt (to taste)
