~Ingredients for Luau Stew~
- 2 pound luau leaves
- 2 pound cooked squid, octopus, chicken, or pork
- 1 tsp Hawaiian salt
- 1 can coconut milk
- 7 chilli peppers (optional)
- 1 tbsp sugar (optional, I don’t use it)
~Prep the luau leaves (not necessary if you bought frozen taro leaves)~
- Cut off the stems and peel the fibrous outside off
- Chop up the stems and the taro leaves into small chunks
- Boil in water for an hour
- Drain water out
~Luau Stew Instructions~
- Simmer prepped luau leaves with chilis in coconut milk for 30 minutes
- Stir in salt, meat, and sugar (I think it tastes sweet naturally but some ppl like it sweeter)
- Enjoy with rice!
***Luau Stew Cheat if you have or find Laulau***
- Cook Laulau in crockpot with coconut milk
- Eat and be happy you got to skip all the prep!

~Ingredients for Chicken Long Rice~
Broth:
- 2 pounds chicken thighs, bone in
- 1 sweet onion
- 3 cloves garlic
- 2 inches ginger, add more if you love ginger like me
- 5 chilli peppers (optional)
- 3 cups of water
- 1.5 tsp Hawaiian salt or regular salt*
The Rest:
- 4 oz long rice. Try and get the ’Nice’ brand
- 1.5 tsp Hawaiian salt or regular salt*
- Lots of green onion
- Zucchini, shimeji mushroom, or other vegetables (optional)
~Chicken Long Rice Instructions~
Broth:
- Simmer all ingredients for broth in the water for 45 minutes or until chicken shreds easily with a fork
- Strain and let sit in refrigerator over night
- Shred the chicken and save for next day
The Rest:
- Skim the fat off the broth then bring to boil
- Simmer whatever vegetables you'd like to add in the broth until cooked
- Turn off heat and mix in salt
- Once salt is dissolved add noodles
- Wait for noodles to soak up broth, about 15-20 min
- Mix in a third of the shredded chicken** with green onions
- Eat long rice with short rice! (really traditional)
*My Uncle Waiau doesn’t use salt at all and uses chicken broth instead, powdered Chinese chicken broth so not to add more liquid. It amplifies chicken broth flavor. just as tasty!
**use the remaining chicken for a side salad!
