Before refrigeration, people preserved meat by salting and drying them. In Yunnan, salted and pressed goose is a wintertime staple eaten during Lunar New Year.
We learned how to cook preserved goose with food influencer Dianxi Xiaoge. We made rice with rendered goose fat and a soup with goose meat and Chinese yam.
This video is part of a six-episode collaboration with Dianxi Xiaoge. With over 11 million followers worldwide, Dianxi Xiaoge is known for her cooking videos showcasing the traditional food of Yunnan Province. We went to live with her for a week and learned how to make her most iconic dishes.
