Let’s Talk Dementia Live With Carol Howell “He Walked Behind Her”

I was demonstrating how to safely walk with an individual with dementia. The technique is proven and effective, yet my client said, "That won't work with my husband. He likes to walk behind me." I was puzzled why that was so. We talked more and discovered the reason. Tune in to today's episode to learn the answer.

Here is the recipe for the amazing Lentil Soup from the book The Blue Zones Solution, by Dan Buettner. You gotta try it!

1/2 pound (1 1/4 cups) green, black, or brown lentils
7 cups vegetable broth
2 large red globe, beefsteak, or heirloom tomatoes, chopped (about 1 1/2 cups)
1 medium yellow or white onion, chopped (about 1 cup) HINT: I used frozen chopped onion I purchase from the freezer section. So Easy!
2 medium carrots, peeled and chopped (about 2/3 cup)
2 medium red potatoes, peeled and chopped (about 2/3 cup)
2 bay leaves
1/2 teaspoon salt
1 tablespoon garlic
Finely chopped scallions, for garnish

Spread the lentils on a large baking sheet and pick them over for any bits or stones. Stir all the ingredients (except scallions) in a soup pot. Bring to a simmer over medium-high heat. Reduce the heat to low, set a lid askew over the pan or pot, and cook until the lentils are soft - 45-60 minutes. Discard the bay leaves. Garnish with scallions and a few drops of olive oil. ENJOY.
