You'll Need:
- 1 cup flour
- 1 tbsp baking powder
- 2 eggs
- ½ cup milk
- ½ red bell pepper, diced
- 2 spring onions, sliced into rings
- 1 tbsp jalapeños
- 1 clove garlic, chopped
- 2 tbsp fresh cilantro, chopped
- 1 cup yellow corn
- 2 tbsp lime juice
- oil
Here's How:
1. Mix flour, baking powder, eggs and milk into a batter.
2. Add the remaining ingredients through to lime juice.
3. Heat a generous portion of oil in a frying pan and then add 2 tbsp of batter to the hot oil. Fry on each side until golden brown.
