Patodi Rassa bhaji recipe is Maharashtrian Besan ki sabji. It tastes awesome when eaten with bhakri, poli (roti), or phulki. It is a typical Marathi recipe which is made in different parts of Maharashtra with little variation in Rassa. Rassa means the red spicy Gravy base of patodi bhaji.

Ingredients:
3 tbsp Oil
1/2 tsp Cumin Seeds
1/2 tsp Sesame seeds
1 Onion (chopped)
1 tsp Ginger Paste
1 tsp Garlic Paste
1/2 tsp Turmeric Powder
1 tbsp Red Chilli Powder
1 tbsp Coriander Seeds Powder
2 cup Gram Flour
1/2 cup Coriander Leaves
Salt
1 cup Water
Oil

For Curry
2-3 tbsp Oil
1 Bay Leaf
1 tsp Cumin Seeds
1 Onion Paste
1 tsp Garlic Paste
1 tsp Ginger Paste
1/2 tsp Turmeric Powder
1 tsp Red Chilli Powder
1 tbsp Coriander Seeds Powder
1 tsp Garam Masala
1 Tomato Puree
1 ltr Water
Salt
Coriander Leaves

Method: Let's start with heating up the Oil in a Pan then add Cumin Seeds, Sesame seeds, Onion (chopped), Ginger Paste, Garlic Paste. Next, saute this till its raw smell goes away. Then add Turmeric Powder, Red Chilli Powder, Coriander Seeds Powder mix it all together properly. Now, add Gram Flour and saute for 4 minutes then add Coriander Leaves, Salt, Water.
Next, cover the Lid and let it cook for 4-5 minutes on a medium flame, after 5 minutes switch off the gas. Now, pour Oil on a plate spread it all around properly then add the Gram Flour Dough (as shown in the video) and let it cool down to make a proper Vada's out of this.
Next, heat up the Oil in the Kadai then add Bay Leaf, Cumin Seeds, Onion Paste saute this till onion becomes pink in colour then add Garlic Paste, Ginger Paste saute this for 2 minutes then add Turmeric Powder, Red Chilli Powder, Coriander Seeds Powder, Garam Masala again saute it for a while.
Next, add Tomato Puree and saute it properly to which add Water, Salt (as per the taste), Coriander Leaves now let it boil and take it out in the serving bowl. Now cut out the coll down Vada into shapes of your liking and your Patwadi Rassa is ready to serve.
