Ingredients:
For Dry Roasting
2 Dried Kashmiri Red Chillies
1 Bay Leaf
1 tbsp Coriander Seeds
Mace Strands
1 tsp Cumin Seeds
4 Cinnamon Sticks
4 Cloves
5 Fenugreek Seeds
3 Green Cardamom Seeds
1 Black Cardamom Seeds
2 tbsp Dried Coconut
1 tsp White Sesame Seeds
1/2 tsp Poppy Seeds
2-3 tbsp Oil
1 Onion (chopped)
1 tsp Ginger Paste
1 tsp Garlic Paste
1/4 cup Coriander (chopped)
4 Tomatoes (puree)
1 tsp Red Chilli Powder
1/4 tsp Turmeric Powder
Salt
1 cup Water
1/2 Cauliflower
1/4 cup French Beans
1 Carrot
1 Potato
1/3 cup Green Peas
1 Capsicum
Method: Let's start with Dry roasting spices for which add Kashmiri Red Chillies in the Wok with Bay Leaf, Coriander Seeds, Mace Strands, Cumin Seeds, Cinnamon Sticks Cloves, Fenugreek Seeds. Next, Stir it in the Pan and roast these on a medium flame then add Green Cardamom Seeds, Black Cardamom Seeds bash them up (as shown in the video) then add to the Wok stir them again and dry roast them. Next, add Dried Coconut, White Sesame Seeds and Poppy Seeds mix them and roast them together. Next, turn off the flame and let the spices to cool down then add them into the grinder and grind them into a coarse powder. Next, let's make Veg Kolhapuri for which add Oil in the Wok after heating up add Onion (chopped) then fried this till the Onion turned golden once the Onion is golden add Ginger Paste, Garlic Paste now saute this for few minutes. Next, add Coriander (chopped), Tomatoes (puree), Red Chilli Powder, Turmeric Powder, add Masala Powder stir it well together then add Salt, Water. Next, add Cauliflower, French Beans, Carrot, Potato, Green Peas, Capsicum, Salt. Now mix it all together properly let it cook on medium flame after this your Veg Kolhapuri is ready to serve.
