Alu Vadi is a snack recipe popular in maharshta and gujarat state. This recipe is made by applying gramflour mixture on colocacia leaves and then steaming and tempering it. Do try it at home and share your feedback.
Ingredients:
Colocacia Leaves
2 cups Gram flour
Salt to taste
1/2 tsp Red Chilli powder
1/2 tsp Turmeric powder
1 tbsp Ginger-garlic-green chilli paste
2-3 tbsp Tamarind paste
4-5 tbsp Jaggery, finely chopped
Water as required
3-4 tbsp Oil
1/2 tsp Mustard seeds
5-6 Curry leaves
1 tbsp Sesame seeds
Method of preparation:
Preheat the steamer.
In a bowl add gram flour, salt, red chilli powder, turmeric powder, ginger-garlic-green chilli paste, tamarind paste, jaggery, water and mix well.
Cut the edges of the colocacia leaves, apply the batter, keep the other leaf in other direction, repeat the process and fold it into cylindrical shape.
Grease the preheated steamer, place the roll inside the steamer and let it steam for 30-35 minutes.
The the rolls out once they are cooled, cut it into disc like shape.
In a wok heat some oil, add mustard seeds, curry leaves, alu vadi, sesame seeds, mix well and switch off the gas.
Garnish it with grated coconut and coriander leaves.
