DIY Teriyaki Sauce Recipe
Here in North America we buy readymade Teriyaki Sauce at the grocery store. The pre-made stuff is ok... But DIY Teriyaki Sauce will bow you away! You are in control of the quality of the ingredients. You are in control of the salt and sugar. You are in control of the 'extra' flavourings.
Ingredients:
1 cup (250 mL) Tamari or soy sauce
1 cup (250 mL) Mirin
1 cup (250 mL) Sake
2 Tbsp (30 mL) sugar
Method:
Place all ingredients in a small pot and gently heat just until the sugar is dissolved.
Pour into a sealable glass bottle and store in the fridge.
Variations:
Taste all of your ingredients to see how the flavours might combine.
Add more or less sugar based on how sweet the Mirin is.
Grate some ginger, onion, and garlic - in varying amounts - into the pot and then strain out before pouring into the storage bottle.
