Ingredients;\r
1 ½ kg whole chicken with skin (preferred) cut in two pieces, washed and cleaned \r
4 cups sella basmati rice\r
4 medium sized tomatoes finely chopped\r
3 medium sized onions cut in slices\r
4 tablespoon ghee\r
2 tablespoon tomato paste\r
2 teaspoon salt or according to your taste\r
8 to 10 garlic cloves chopped\r
3 dried bay leaves\r
1/2 teaspoon black pepper corns\r
1/2 teaspoon cloves\r
1/2 teaspoon green cardamoms \r
Two pieces of 2 inch cinnamon sticks\r
2 dried black lemon\r
40 grams blanched almonds\r
50 grams lightly fried raisins\r
1/2 teaspoon ground white pepper\r
Pinch of saffron (Soaked it in warm milk) \r

Ingredients for Kabsa (Bahārāt) spice mix\r
1/2 teaspoon red chili powder\r
1 teaspoon cloves\r
1 ½ teaspoon cumin seeds\r
1 teaspoon black pepper \r
1/2 teaspoon green cardamoms \r
One small piece of nutmeg\r
1/2 teaspoon turmeric powder\r
Combine all the spices and grind them to a fine powder
