1 tbsp
1 Bay Leaf
Stone flower
1 Star Anise
5 cloves
1 tbsp coriander seeds
1 tbsp Annie seeds
1/2 Nutmeg
1/2 inch cinnamon
1 tbsp poppy seeds
8 peppercorns
3 tbsp ghee
1 finely chopped onion
1/2 tbsp of each - ginger-garlic paste
1/2 tsp turmeric powder
1/2 tsp red chili powder
2 tbsp of prepared garam masala
1/2 kg Mutton
1 cup Coconut&Onion Paste
Salt to taste
1 liter Water
Coconut&Onion Paste:
Take 1/2 fresh coconut, roast it until turns brown.
Take 2 medium sized onions, slice it and fry it nice and golden and make a paste of it.
Method of preparation:
In a wok, dry roast byadagi chilies and keep it aside.
Add oil to the wok and fry rest of the garam masalas.
Add Bay Leaf, Stone Flower, Star Anise, cloves, coriander seeds, Annie seeds, Nutmeg, cinnamon, poppy seeds, peppercorns and gently roast them until the masalas give out a lovely aroma.
Let the masalas cool down and then add the chilies as well and grind it into a fine powder.
Heat a pressure cooker, add ghee, onions, and saute it until the onions turn translucent.
Once the onions turn translucent add ginger-garlic paste, and saute them until the raw smell goes off.
Add turmeric powder, red chili powder, and now add the garam masala that we've prepared. Mix them well.
Add mutton, and sear it on high flame for 5 minutes.
Add Coconut&Onion Paste, salt and water.
Pressure cook the mutton gassi until 1 whistle and then cook it more on low flame for 15 minutes and our gassi will be ready.
Take it out on a serving and it is ready to be served.
