It is a common misconception to associate buttermilk with the richness of butter. buttermilk does not have butterfat. Buttermilk is the liquid remaining after taking the fat out from the milk in the process of making butter, thus it is lower in calories and fat than butter and higher in calcium, Vitamin B12 and potassium than regular milk. And use cultured buttermilk, if you substitute 2% for cultured buttermilk in this recipe it will upset the balance of wet and dry ingredients (because its thinner), and you dont want to lose the nutritional value of buttermilk. After all, you wouldnt want to take the yo out of yogurt.\r
