MUTTON YAKHNI PULAO By Urdu Recipe
Urdu Recipe channel is giving you "MUTTON YAKHNI PULAO".This is a traditional dish of Pakistan & India and very easy to make. Rice and Mutton are cook in broth, such a very good taste and full aromatic dish.
INGRDIENTS:
* Mutton Chops ( 750 gm )
* Onion ( 1 large roughly sliced )
* Green Chillies ( 4 slit cut )
* Whole Garlic Bunch ( 1 )
* Coriander Seeds ( 4 tbsp )
* Fennel Seeds ( 2 tbsp )
* Ginger Garlic Paste ( 1 & 1/2 tbsp )
* Button Red Chilli ( 10 )
* Cumin ( 1 tbsp )
* Black Pepper ( 1 tsp )
* Black Cardamom ( 1 )
* Cinnamon Stick ( 3" of 1 )
* Cloves ( 5-6 )
* Green Cardamom ( 3 )
* Salt ( 1 tbsp )
* Water ( 10 - 12 glass )
For baghaar :
* Basmati Rice ( 750 gm soaked and washed )
* Oil ( 1/2-3/4 cup )
* Onion ( 1 med sliced )
* Yougert ( 1 cup ) OR ( 250 gm )
* Green Chillies ( 4 roughly slice )
* Ginger Julienne ( 1 tbsp )
* Ginger Garlic Paste ( 1 tbsp )
* Black Cumin ( 1tsp )
* Black Pepper ( 6-8 )
* Black Cardamom ( 1 )
* Cinnamon Stick ( 2" of 1 )
* Cloves ( 6-8 )
* Green Cardamom ( 3 )
* Bay Leaves ( 2-3 )
* Salt ( 1 tbsp heaped ) OR ( to your taste )
For sprinkling on dum :
* Kewra Water ( 1 tsp )
* Green Cardamom powder ( 1/2 tsp )
* Black Cumin crushed ( 1 tsp )
* Brown onion ( 1/2 cup )
METHOD:
FOR BROTH
1.Take a pan add water, mutton chops, Onion, Green Chillies, Whole Garlic Bunch, Coriander Seeds, Fennel Seeds, Ginger Garlic Paste, Button Red Chilli, Cumin, Black Pepper, Black Cardamom, Cinnamon Stick, Cloves, Green Cardamom and Salt. cook until mutton become tender.
2.Seperate broth and mutton chops with button red chillies.
FOR BAGHAR
1.Take a big pan add onion, black cumin, whole spices, ginger julienne & green chillies. Fry until light golden ( med flame )
2.Add ginger galic paste and add mutton with button red chilli, fry 2-3 mins with ( high flame )
3.Add yougert & salt. fry until water dries up ( med flame )
4.Add rice and broth mix it well. Cook until water dries up ( med flame )
(NOTE: Check salt at this step,If need u can add to your taste)
5.at low flame. sprinkling Kewra Water, Green Cardamom powder, Black Cumin crushed & Brown onion. Cover & simme for 20 mins.
6.MUTTON YAKHNI PULAO is ready to serve with Green Raita. :)
