Sip on This Vegan Eggnog All Holiday Season Long

'Tis the season to sit by a warm fire with a cup of creamy eggnog. If you're dairy-free and looking for a delicious alternative, this vegan eggnog will hit the spot. Made with all things coconut, a hint of vanilla, and loads of holiday spices, you'll go just as crazy for this drink as everyone did for Trader Joe's Almond Eggnog.


Vegan Eggnog From Lisa Barnet

Ingredients
    3 cups coconut milk beverage, chilled
    1 1/2 cans coconut cream
    1/2 cup maple syrup
    1 teaspoon vanilla
    1/4 teaspoon salt

    To garnish:
    1 1/2 teaspoons freshly grated nutmeg
    1 cinnamon stick
    1 star anise

Directions

  1. Add all ingredients to a blender and blend on high for 1 minute. (Alternative: whisk all ingredients together.) Chill for at least 2 hours.

  2. Pour into glasses and top with freshly grated nutmeg, cinnamon, and star anise.
