Cotton Candy Cupcakes:\r
• 1 1/4 cups all-purpose flour\r
• 1 teaspoon baking powder\r
• 1/4 teaspoon salt\r
• 1/2 cup butter\r
• 1 cup sugar\r
• 2 eggs\r
• 1/2 cup milk\r
• 1/4-1/2 teaspoon cotton candy flavoring\r
• 1 cup cotton candy (do not pack)\r
• Pink/blue/purple gel paste\r

Cotton Candy Buttercream:\r
• 1 cup butter \r
• 2 cups icing sugar\r
• 1/4-1/2 teaspoon cotton candy flavoring\r
• 2 tablespoons milk\r
• 1 cup cotton candy\r
\r
Procedure:\r
Cupcakes\r
Preheat oven to 350F. Line cupcake pan with liners.\r
In a small bowl, whisk together flour, baking powder and salt. Set aside for later. \r
In the bowl of a stand mixer fitted with the paddle attachment, cream butter, sugar and eggs until light and fluffy. \r
Add the cotton candy flavouring and mix it in. \r
Alternating between additions of milk and the flour mixture, mix until the batter is smooth. \r
Mix the cotton candy in last. \r
Divide batter into three equal portions and colour one portion purple, one blue, and one pink. \r
Place a tablespoon of each colour into the cupcake liners, or fill until the well is 3/4 full. \r
Bake cupcakes for 20 minutes. Allow to cool completely. \r

Buttercream\r
Cream butter in bowl of stand mixer fitted with the paddle attachment. \r
Add icing sugar, milk and flavouring. Mix until smooth. \r
Add cotton candy, and mix until the cotton candy is broken up into small pieces.\r
Place into piping bag fitted with a large round open tip, such as Ateco 809. \r
Pipe icing onto the top of the cupcakes and garnish with mini cotton candy cones if desired. \r
Serve immediately, or store in a sealed container in the fridge for 2-3 days.\r
