There are many variations of gajar ka halwa, but its main ingredients are freshly grated carrots, milk, sugar, khoya, and ghee. The quantity and quality may vary according to personal taste.
There are variety of ways that one can make gajar ka halwa, whether it is made with milk, condensed milk, milk powder or with khoya. I love making it with milk for the most traditional touch. But this time I decided to make it with prepared khoya. Beacuse I was not feeling well and it takes less time and can be prepared quickly. The result was fabulous...

Here's the simple and quick recipe!

Ingredients:
2kg red carrots (washed, peeled & grated)
1 cup butter or ghee (clasified butter)
1 glass milk
½kg granulated sugar
1 cup grated coconut (optional)
Almonds & pistachios
1 kg khoya or mawa (Don't forget to crumble the khoya if you are using readymade one)

Method:
Wash, Peel and grate the carrots. In a heavy pan or karahi add ghee or butter and melt it. Add grated carrots and a glass of milk. Cover the karahi with lid for about 5 to 7 minutes.
After that open the lid and cook it on medium flame for 30 minutes or till carrots cooks well and sucks all the milk.
Then add sugar and mix well. Sugar leaves water then cook stirring occatinally till ghee leaves the edges.
Add grated coconut and almonds mix well and turn off the heat.
Let it cool for minutes and finally add khoya. Mix it softly till lumps have disappeared and gajar ka halwa turned to your desired consistency.

gajar ka halwa is ready, serve warm or cold. Njoy!
