How to make Easy Maamoul / Pistachio and dates Cookies / Recipe#186

These are so delicious cookies are made of semolina flour and butter mixed with clarified butter and stuffed with date and pistachio with rose water. They are not too sweet just the way I like them. They crumble in your mouth just perfect.

Ingredients:
1 3/4 cup fine semolina
1/2 cup flour
1/4-1/2 sugar
1 tsp mahlab
1/4 tsp dry yeast or 1/2 tsp baking powder
1/4 tsp salt
1/2 cup butter 1/4 clarified butter melted
1/4 to 1/2 cup rose water to be added gradually to the semolina mix.
How to make the fillings:
- 1 cup Crush pistachio with rolling pin
- Add sugar to your liking about 2-3 Tbsp
- Add rose water little by little until it becomes sticky together.
- Make very small balls and set aside.
-1 cup date paste
-Fried in a little of oil about 2 Tbsp for a few minutes
-Add 1 tsp cardamom or cinnamon powder.
-Mix well and make very small balls and set aside.
Maamoul mold made of wood or plastic. If the molds are not available, you can make them just round shape.
Steps:
1-In a bowl mix semolina, flour, sugar, dry yeast, mahlab and sugar.
2-Add melted butter and clarified butter and mix well then work with your hands until it resemble sand like consistency.
3-Cover with plastic wrap and leave aside for about 4 hours or overnight in the fridge.
4-Add rose water gradually over semolina mixture and mix well then knead for a few minutes and cover again for couple of hours.
5-knead again well until it becomes a very soft dough but not sticky. If the dough still sticky, you can a bit of flour and knead again and it is not sticky. Cover and set aside.
6-Make balls bigger than the fillings. It depends how much filling you like to have comparing to the dough. Some people like to have more filling than the dough and others like more thicker dough than the filling. I would say make the the dough size double of the filling size.
7-Stuff the dough with the filling and use your desire mold shape. Authentically they use the long mold shape for the pistachio filling. But you can use anyone you like just make them two shape so you can distinguish them from each other.
8-Press gently in the mold then flip and tap a couple of times on a firm surface to release the cookie.
9-Arrange on a baking sheet that is lined up with parchment paper.
10-Bake at preheated oven at 400 F for about 12 to 15 minutes. You are looking at a very light brown color on top and slightly light brown on the bottom.
11-Leave on the sheet for few minutes until they are slightly warm then you can sprinkle them with powder sugar if you like but they looks so festive and beautiful of you do.
12-When they are cool, store them in a container with tight lid and you can keep them for a week over counter top.
