Ingredients
• 3 packs of the new Choco Chip Oreo’s (we will reserve 10 for decoration)
• 1 (8 oz) pkg. cream cheese, softened
• 1 bag of blue candy melts
• 72 candy eyes
Directions
• Line a cookie sheet with wax paper, set aside.
• Place 36 Oreos in a food processor and pulse into fine crumbs.
• Add crushed Oreos into the bowl of a stand mixer with cream cheese and mix on low speed until well combined.
• Scoop mixture out about 1 Tbsp at a time and form into 1 inch balls then place on lined cookie sheet.
• Place truffles in freezer for 15 minutes.
• While the truffles are getting cold use a remove filling from cookies and use a serrated knife to cut the remaining cookies into quarters creating 4 triangels. Try to keep the rounded edge in tact.
• Melt blue candy melts.
• Remove truffles from freezer and dip in chocolate melts and use a spoon to pour some chocolate over the top then lift and allow excess chocolate to run off.
• Return to baking sheet, immediately add two eyes to the truffle and place the cookie piece as the mouth.
• Store in an airtight container in refrigerator.
