Ingredients:
1 1/2 cups whole wheat flour
1 cup soy milk or any plant-based milk
1 cup pizza sauce
2 Tbsp ground flax seeds + 6 Tbsp water
2 cups broccoli
1 cup plant-based mozzarella cheese
1 1/2 tsp baking powder
2 tsp Italian Seasoning
1 tsp salt
Extra pizza sauce for dipping
Directions:
Preheat Oven to 375 degrees.
Lightly oily 48 mini muffin tins or 12 full muffin tins.
Mix flax with water.
Steam broccoli and chop.
In large bowl, mix flour, baking powder, Italian Seasoning, and salt.
Add milk, flax egg, and 1 cup pizza sauce and stir well.
Fold in cheese and broccoli.
Fill muffin tins almost to top and bake for 20-25 minutes till golden brown.
Heat extra pizza sauce for serving.
