Recipe for: Chinese Stir Fry Chilli Squid
Ingredients:
300g Squid
3 Dried Red Chillies
1 Green Pepper
0.5cm Ginger
2 Spring Onions
1 Clove Garlic
1 Tbsp Cooking Wine
1 Tbsp Light Soy Sauce
2 Tbsp Peanut Oil
Salt to Taste
Method:
1. Roughly chop the spring onions, chillies and garlic.
2. Cut the ginger into thin threads.
3. Cut the green pepper into bite size piece.
4. Place squid flat, make fine cross cut on the surface of each squid – Be careful not to cut all the way through
5. Boil 1 litre of water in a pan
6. Place squid into the pan and blanch for a minute. Remove and drain.
7. Heat peanut oil in the wok. Add ginger, garlic, chilli, green pepper and fry for a minute.
8. Add the squid and stir fry for another minute.
9. Add cooking wine, soy sauce and spring onion. Fry for few seconds. Salt to your taste
10.Transfer onto a dish and serve.
