Recipe for: Quail Eggs in a Pig Sty
Ingredients:
10 quail eggs
200g mince pork
2 spring onions
0.5cm ginger root
1 Tsp Chinese cooking wine
Half Tsp ground Sichuan pepper
1 Tbsp oil
1 Tbsp cornflour
10ml chicken stock
50g breadcrumbs
Salt to taste
Method:
1. Boil the quail eggs for 2 minutes then peel off the shell.
2. Finely chop the spring onions and ginger.
3. Place mince pork in a mixing bowl.
4. Add spring onion, ginger, Sichuan pepper, cooking wine, oil, salt, stock, cornflour. Mix all ingredients well.
5. Take 1 and half Tbsp of the mixture, flatten it with the palm of your hands.
6. Place 1 quail egg in the middle of the mixture, fold and roll with your hand to form a ball - ensure an even coverage of the egg.
7. Place onto a dish and continue with this method.
8. Roll each of the ball into breadcrumbs evenly.
9.Place meatballs in 1 litre of oil, deep fry until golden and floating.
10.Remove from oil and drain, serve hot.
