Recipe for: Sweet & Sour Fish
It's sweet, it's sour, it's spicy and it's savoury. My dad loves this when I cooked it for my family for the first time. What will yours say? Cook it with me and find out!
Ingredients:
3 Cod Fillets
2 Green Peppers
2 Tomatoes
4 Cloves Garlic
0.5cm Ginger
2 Spring Onions
1 Tsp Chilli Flakes
Small Bunch Coriander
3 Tbsp Cornflour
For the sauce:
100ml of Water with:
1 Tbsp Sugar
2 Tbsp Tomato Puree
4 Tbsp Dark Soy Sauce
4 Tbsp Vinegar
1 Tbsp Cornflour
Methods:
Cut fish into 1cm cubes and place into a large mixing bowl
Sprinkle 3 Tbsp corn flours and mix well for an even coverage
Chop garlic, ginger and spring onions
Cut green peppers into bite sizes pieces
Cut tomatoes into bite sized pieces
Roughly chop the coriander
To make the sauce:
Add the sugar, tomato Puree, vinegar, soy sauce, cornflour and mix.
Then add the water while mixing.
Heat 1 Tbsp oil in a pan
Add garlic, ginger, spring onion & chilli flakes, fry for few seconds
Pour the sauce mixture into the pan and bring to the boil, stir continuously
Add salt to your taste and then remove from heat
Heat 1 litre oil in a wok until smoking hot
Place fish one piece at the time and deep fry until turning light brown and floating
Remove from oil and drain
Bring the sauce to the boil again on high heat
Add green pepper, tomato and coriander, stir for a minute
Add the deep fried fish into the wok, gently turn the contents until evenly mixed
Transfer contents onto a dish, garnish and serve
