Recipe for: Chilli Fries

Ingredients:
2 Medium Potatoes
1 or 2 Red Chilli Peppers (optional)
1 Spring Onion
2 Cloves Garlic
½ Tsp Ground Ginger
Salt to Taste

Method:
1. Finely chop the spring onion and garlic.
2. Thinly slice the chilli peppers.
3. Cut potatoes into very thin threads.
4. Bring 1 litre of oil to smoking hot in the wok.
5. Place the threaded potato into the wok, deep fry for 15 to 20 minutes until crispy.
6. Remove from oil and drain. Leave about 1 Tbsp of oil in the wok and discard the rest.
7. Add the chilli peppers, spring onion, garlic and ground ginger into the wok and fry for a minute.
8. Add the deep fried threaded potato, add salt to your taste.
9. Stir fry for a minute, transfer onto a dish and serve.
