This is sometimes called the 'Gin Mojito' - as with most Gin cocktails we prefer a stir over a shake. We serve this in a 'cocktail' glass... but serve it in an old fashioned, or coupe (champagne saucer) if you wish.
We don't muddle this cocktail, we find that can give some off flavour from the mint. So we just slap the mint to release some of the oils, and keep going.
You'll also see many recipes that call for lime juice instead of lemon; the earliest references to this cocktail indicate lemon... do as you wish - you're drinking it.


Ingredients:
5 Mint leaves
1 oz Simple syrup (one part sugar, one part water)
1 oz Lemon juice
2 oz Gin

Garnish: Mint sprig
Glass: Cocktail

Method:
Slap or spank the mint leaves then throw them into a mixing beaker. Add the lemon juice and gin, and fill with ice. Stir, and strain into a fully chilled cocktail glass. Garnish with a mint sprig that you've slapped around a bit.
