How to make Pandhra Rassa - Kolhapuri Style Chicken Curry - Recipe by Archana in Marathi

Our Chef Archana brings to you the delightful spicy mouth watering recipe of Pandhra Rassa which is a speciality of Kolhapur. Pandhra Rassa is a white colored chicken gravy with lots of spices. This chicken recipe is very easy and quick to make at home.

Ingredients:

250 gms Chicken
2 tbsp Oil
3 Dry Red Chillies
1 Onion, chopped
1 tsp Masala [Cinnamon (dalchini), Caraway Seeds (shahjeera), Cloves (lavang), Coriander seeds (dhane) ]
1 tbsp Ginger Garlic Paste
1/2 tsp White Pepper Powder
2 tbsp Cashew - Khaskhas - Dried Coconut paste
1 Cup Coconut Milk
Salt to taste
1 Cup Water

Method:

- In a pan, add oil and dry red chillies.
- Then add onion, masala (cinnamon, caraway seeds, cloves, coriander seeds), salt and mix well.
- Add ginger garlic paste, white pepper powder, chicken & mix everything well.
- Then add cashew - khaskhas - dried coconut paste and mix well.
- Add coconut milk and again mix everything well.
- Add some water and let the gravy boil on a low flame for 5 to 7 minutes.
- Spicy Hot Pandhra Rassa is ready.
