Scientists at the University of California, Irvine and University of Western Australia have figured out how to unboil an egg and do so relatively quickly.

What happens to an egg white when it gets boiled in the first place is that the proteins become clumped and entwined.

Getting them to break apart again was accomplished in a two-step process.

First, the researchers injected urea into the solid white mass.

Though that did turn the substance back into a liquid there was still work to be done.

Within the viscous material a number of molecular knotted bits remained, so to finish the job the scientists enlisted the help of a vortex fluid device to force them into the desired form.

They didn’t do it because they were sick of wanting omelettes when they’d already made egg salad, but frustration did play a key role in the development of the process.
