Cultura Latina - Culinary Traditions: Ceviche and Cevichocho

Follow the music, admire the art, place yourself inside historic architecture, in Telesur's "Cultura Latina". This week's program, hosted by Mauricio Izquierdo, is the first in a series on Latin American culinary traditions. We begin with Peruvian cuisine, very popular worldwide, and its famous signature dish ceviche -a raw fish cocktail "cooked" in lime juice- with Chef Ronald Abad showing how its prepared. Then we take a look at the Peruvian dish's Ecuadoran and vegetarian cousin, cevichocho, a typical treat from Quito. It is made with chocho beans, onions, tomatoes, cilantro, lime, and tomato sauce and served with corn, although the list of ingredients is expanding and to a large extent depends on the customer's wishes.
