Ingredients:

2-3 cup walnuts, slighly toasted
4 cloves of garlic
2 cups basil leaves, stems removed
2 tsp lemon juice
2/3 cup extra virgin olive oil
60 grams Parmesan cheese, grated
salt and pepper to taste

Method:

To make pesto sauce:
- Toast up the walnuts either in a pan or in the oven at 180 degrees Celsius for about 10 minutes to release their flavour.
- Chop the walnuts roughly and add them to the blender. Also add the cloves of garlic, fresh basil leaves, fresh lemon juice and the extra virgin olive oil.
- Blend all the ingredients together. After blending it once, drizzle in some more extra virgin olive oil. Pour in the rest of the olive oil in the third round of blending.
- Add very little salt to the sauce and grind in the pepper and blend the ingredients again.
- Pour the pesto sauce in a bowl.
- Add the grated Parmesan cheese to the sauce and mix well. Make sure you do it in batches. Do not add all the cheese in one go.
- The pesto sauce is ready.

To make pasta:
- Take some pasta, boil and drain it and keep the pasta cooking water.
- Add the pesto sauce to the pasta in the same pan in which you boiled the pasta.
- Add little amount of the reserved pasta water.
- Grate some Parmesan over the pasta.
- The pasta is ready to be served.

To make the toast:
- Toast up the bread in the toaster.
- Cut the bread into 2 halves and smear them with the pesto sauce.
- Top up the bread toast with few roasted tomatoes and Parmesan.
- The toast is ready to be served.
