This simple tasty one pot meal will surely be a hit with your family.
SERVES: 4 - 6
Ingredients:
1 pound (500g) Italian sausage
2 Tbsp (30 mL) extra-virgin olive oil
3 assorted bell peppers thinly sliced
1 bulb fennel trimmed and sliced
1 large onion, sliced
coarse salt
3 cloves garlic, minced
1 tsp (5 mL) chopped fresh rosemary
½ tsp (2 ml) red pepper flakes
½ tsp (2 mL) fennel seeds (optional)
1 I5-ounce (398 mL) can diced tomatoes
½ cup (125 mL) red wine
Method:
Preheat the broiler. Poke holes in the sausages and arrange on a baking sheet; broil until golden brown - about 8 minutes, turning halfway through. Then cut in half.
Meanwhile, heat olive oil in a large skillet over medium-high heat, toss in the bell peppers, fennel and onion; cook & stir until they soften slightly - about 3 minutes.
Add salt, garlic, rosemary, red pepper flakes and fennel seeds Cook, stirring, 1 more minute.
Stir in ½ cup red wine, and the tomatoes; reduce heat to medium, cover and cook until the vegetables are tender- about 5 minutes. Uncover add the sausages and cook
through - another 3 to 4 minutes.
