Soba is the Japanese name for buckwheat and it also means the noodles made from buckwheat flour. In Japan Soba Noodles are served either simply chilled with a dipping sauce or in hot broth as a noodle soup, similar to how Japanese Udon noodle soup is prepared. Cold soba noodles are typically served in zaru, which means bamboo basket in Japanese.
Ingredients
150g Of Soba
4 Parts Of Dashi (Veg Or Fish Stock)
1 Part Of Japanese Dark Soy Sauce
1 Part Of Mirin / Sake (Sweet Cooking Wine)
Tip: One Can Alternate Mirin By Adding Sugar To Dry White Wine
Julians Of Sea Weed/ Nori For Garnish
Chopped Leeks Or Spring Onions
White Sesame Seeds
Wasabi
Tips while you cook
Do not add any salt while cooking soba as it already contains salt in it
One can alternate the soba with udon (thicker noodles) or somen (thinner noodles), both are made out of whole wheat
Soba comes in different flavours such as green tea or cha soba
Gently handle the soba or chances are that the strands will break
Vigorous boiling ensures that soba rolls in water and is cooked evenly
Take a noodle of soba and dip it in cold water and break open to check if the inside is still white which means it still needs more cooking
