Passion fruit:
Passiflora edulis or Passion fruit is a vine species of passion flower that is native to Brazil, Paraguay and northern Argentina (Corrientes and Misiones provinces, among others). Its common names include passion fruit (UK and US), passionfruit (Australia and New Zealand), and purple granadilla (South Africa). It is cultivated commercially in warmer, frost-free areas for its fruit and Fresh passion fruit is high in beta carotene, potassium, and dietary fibre. Passion fruit juice is a good source of ascorbic acid (vitamin C), and good for people who have high blood pressure. Some research is showing that purple passion fruit peel may help with controlling asthma symptoms. The fruit contains Lycopene in the mature and immature pericarp. The passion fruit is round to oval, either yellow or dark purple at maturity, with a soft to firm, juicy interior filled with numerous seeds. The fruit is both eaten and juiced; passion fruit juice is often added to other fruit juices to enhance the aroma.

The two types of passion fruit have clearly differing exterior appearances. The bright yellow variety of passion fruit, which is also known as the Golden Passion Fruit, can grow up to the size of a grapefruit, has a smooth, glossy, light and airy rind, and has been used as a rootstock for the Purple Passion Fruit in Australia. The dark purple passion fruit is smaller than a lemon, though it is less acidic than the yellow passion fruit, and has a richer aroma and flavour. The purple varieties of the fruit have been found to contain traces of cyanogenic glycosides in the skin.


Lemons:
The lemon is a small evergreen tree native to Asia, and the tree's ellipsoidal yellow fruit. The fruit's juice, pulp and peel, especially the zest, are used as foods. The juice of the lemon is about 5% to 6% citric acid, which gives lemons a sour taste. The distinctive sour taste of lemon juice makes it a key ingredient in drinks and foods such as lemonade. Lemon juice, rind, and zest are used in a wide variety of food and drink. Lemon juice is used to make lemonade, soft drinks, and cocktails. It is used in marinades for fish, where its acid neutralizes amines in fish by converting them into non-volatile ammonium salts, and meat, where the acid partially hydrolyzes tough collagen fibers, tenderizing the meat, but the low pH denatures the proteins, causing them to dry out when cooked. Lemon juice is frequently used in the United Kingdom to add to pancakes, especially on Shrove Tuesday. Lemon juice is also used as a short-term preservative on certain foods that tend to oxidize and turn brown after being sliced, such as apples, bananas and avocados, where its acid denatures the enzymes that cause browning and degradation.

Lemon juice and rind are used to make marmalade and lemon liqueur. Lemon slices and lemon rind are used as a garnish for food and drinks. Lemon zest, the grated outer rind of the fruit, is used to add flavor to baked goods, puddings, rice and other dishes. Preserved lemons are a part of Moroccan cuisine. They are also one of the main ingredients in many Indian cuisines. Either lemon pickle or mango pickle is part of everyday lunches in Southern India. The leaves of the lemon tree are used to make a tea and for preparing cooked meats and seafoods.

Sikkim:
Sikkim is a landlocked Indian state located in the Himalayan mountains. The state borders Nepal to the west, China's Tibet Autonomous Region to the north and east, and Bhutan to the southeast. The Indian state of West Bengal lies to the south. With around 607,000 inhabitants as of 2011, Sikkim is the least populous state in India and the second-smallest state after Goa in total area, covering approximately 7,096 km2 (2,740 sq mi). Sikkim is nonetheless geographically diverse due to its location in the Himalayas; the climate ranges from subtropical to high alpine, and Kangchenjunga, the world's third-highest peak, is located on Sikkim's border with Nepal. Sikkim is a popular tourist destination, owing to its culture, scenery and biodiversity. It also has the only open land border between India and China. Sikkim's capital and largest city is Gangtok.
