Melt Master Eric Greenspan heads to Dinah's Fried Chicken, a family-run joint that's been around since the 1950's, serving Pasadena, Calif., some seriously yummy and unique fried chicken. They've perfected a curious process known as broasting, which is supposed to be healthier for you than deep frying the chicken... although health isn't the first thing on our minds when it comes to fried chicken OR grilled cheese sandwiches! Chef Eric Greenspan learns all about this broasting process, from breading the chicken to giving it a quick shower to dropping it in the fryer and turning on the high-heat pressure cooker. Then he tries all of the goodies that Dinah's serves, like pineapple cole slaw, mac 'n cheese and in the process he discovers those delicious little NUBBINS!! Inspired by the down-home food at Dinah's, his grilled cheese recipe starts with munster cheese on white bread, gets funky with some pineapple chutney then drops the bass with those nubbins, a crazy breading and a BUTTERMILK FACE SHOT!
