So the important thing, if you were paying attention, is the 3:1 ratio. So do whatever you want, add whatever you want, make it delicious! but if you really want the recipe so you can measure things because you're that guy:

Lemon Dressing
3 parts olive oil
1 part lemon juice
1 garlic clove (smashed if you're using a blender, or finely chopped if you're just going to mix it by hand)
salt
black pepper

Champagne Vinaigrette
3 parts olive oil
1 part champagne vinegar
a dollop of dijon mustard (or to taste)
salt
black pepper
honey, if you desire, to taste

Red Wine Vinaigrette
3 parts olive oil
1 part red wine vinegar
a large pinch of dried oregano
a small pinch of dried red chili flakes
salt
black pepper
