Dian Thomas talks Johnny Carson, her dramatic weight loss and best selling books this week on Food Exposed

Dian has been a guest on The Tonight Show with Johnny Carson, which lead to her having a contract on the Today Show, the Home Show and Good Morning America. You can see her on Hallmark's Home and Family Show as well. Dian has lost a staggering 120 lbs and will share her amazing weight loss success story this week. She'll give her motivations, struggles and tips for weight loss as well.

This week's recipe is chock-full of super vitamins, minerals, antioxidants and cancer-fighting folates (on top of being super yummy as well)! Jackie's Pasta with White Beans & Kale is a low-calorie, low-fat pasta dish that is perfect for those who want to keep pasta in their diet AND lose weight!

White Beans & Kale

Servings: 4 Serving Size: 2 cups

Ingredients:



1tbsp.extra virgin olive oil



3cloves garlic, minced



10cups kale, stems removed and chopped



½cupreduced sodium vegetable broth



1tsp.NutriFit Mediterranean Salt Free Spice Blend



¼tsp.black pepper



1 ½cupspasta, cooked al dente and drained



1tbsp.fresh lemon juice



2cupswhite beans (cannellini or other)



¼cupflat leaf parsley, chopped



¼cupfeta cheese, crumbled



Directions:



1. Heat oil in a large nonstick skillet over medium-high heat. Add garlic; saute 1 minute. Add kale, broth, spices and pepper, stirring to combine. Cover, reduce heat to medium and simmer 5 minutes or until kale wilts, stirring occasionally.

2. Add pasta, juice and beans to pan, stirring to combine; cook 1 minute or until mixture is thoroughly heated.

3. Divide pasta mixture evenly among 4 plates; sprinkle each serving with 1 tablespoon parsley and 1 tablespoon cheese.

Dian Thomas was blessed with the good fortune to be born and raised in breathtaking southern Utah where her father was a forest ranger. Dian’s family gave her the opportunity to learn camping activities, outdoor cooking techniques and many other skills for creating fun over a campfire and in the wilderness. Dian’s master’s thesis provided the basis for her first book, Roughing It Easy. Her appearance on The Tonight Show with Johnny Carson propelled the book to the New York Times best-­seller list where it remained all summer. From that momentum, Dian worked hard to become an expert in public relations, publicity and promotion.
