What’s your secret recipe for cooking sausage? A team of researchers in Spain have a bizarre technique for preparing sausage and they’re not keeping it quiet.

The scientists are proposing that baby poop….or at least what’s in it, could make sausage not only tasty but healthier as well. They started off their experiment by gathering 43 fecal samples, which were taken from healthy infants up to 6 months of age.

All of the specimens had been removed from dirty diapers. Lactobacillus and Bifidobacteriumare are the two most popular types of bacteria for probiotic use. These two forms of bacteria are far more plentiful in infant feces when compared to adult waste.

The researchers attempted fermenting six batches of sausage using three stains of bacteria taken from the baby poop, two of which were Lactobacillus and Bifidobacteriumare. They also utilized three differing forms of bacteria that are considered ‘commercial probiotic strains’.

The scientists cooked up a type of Mediterranean fermented pork sausage, typically called fuet. Only one strain of bacteria became dominant in the experiment and amazingly it came from the dirty diapers.

According to the researchers, that particular strain grew ‘to levels of 100 million cells per gram of sausage.’ The sausage tasted just as good as normal fuet, but the versions with baby poop bacteria boasted lower fat and salt contents.
